Виноград – древнейшее из выращиваемых человеком растений. Уже многие тысячелетия его растят в Иране. А в заповедных местах страны можно встретить и дикие виды этого растения.
Вряд ли есть необходимость описывать внешний вид кустов винограда – его видели все.
Плантации винограда в Иране встречаются повсюду, но особенно много их в Казвине, Хамедане, Ширазе и Западном Азербайджане.
В кулинарии народов Ирана находят применение даже листья растения. Из них готовят очень вкусное блюдо под названием “долма” (голубцы в виноградных листьях). А его ягоды – кладовая витаминов и целебных веществ. Находит виноград применение и в косметике.
Неспелые виноградины, имеющие зеленый цвет и кисловатые на вкус, называются по–персидски «гуре». Сок из них служит хорошей приправой для салатов и блюд, которая не только делает пищу вкусной, но и возбуждает аппетит.
Виноградный шербет является другой продукцией, получаемой из этого растения. А высушенный при определённых условиях виноград называется изюмом и может храниться годами.
Из сока винограда получают также прекрасный уксус.

Сбор урожая винограда во многих останах (областях) Ирана – не только радость для местных крестьян. Это древний праздник, который ныне занесён в список национального наследия Ирана. В эти дни здесь звучат музыка и песни, а гостей, друзей и просто прохожих угощают этим замечательным даром Всевышнего. Ведь сам великий Пророк Ислама (Да благословит Аллах его и его семейство!) однажды заметил, что “наилучшим фруктом является виноград, а наилучшей едой – хлеб” (Хадис 6002).
Давайте вместе с Студенческим новостным агенством Ирана (ISNA) побываем в деревне Хазаве, что в шахрестане Эрак в Центральном остане. Здесь в октябре целых 3 дня длятся народные гуляния, посвященные Его Величеству – Винограду.

Обычно посещая Иран в начале осени, я не только ежедневно лакомлюсь этим “наилучшим фруктом”, но и обязательно привожу домой иранский изюм. Поэтому, пару слов о ценах. Отборный виноград в минувшем сентябре стоил в Хамедане от 40.000 до 70.000 реалов (0,25 – 0,43 евро) за килограмм. Желтый изюм, купленный в легендарном городке Гадамгах, обошёлся в 300.000 реалов (1,9 евро), а тёмный изюм из Язда – в 170.000 (1,21 евро) за килограмм.

Grape festival

Grapes – the oldest of human-grown plants. Already many millennia it grows in Iran. And in the protected areas of the country can be found and wild species of this plant.
There is hardly any need to describe the appearance of the vine bushes – everyone saw it.
Grape plantations are found everywhere in Iran, but especially in Qazvin, Hamedan, Shiraz and Western Azerbaijan.
Even the leaves of the plant are used in the cooking of the peoples of Iran. Of them prepare a very tasty dish called “dolma” (cabbage rolls in grape leaves). And its berries – a pantry of vitamins and healing substances. Finds grapes use in cosmetics.
Unripe grapes, having a green color and sour taste, are called in Persian “gora”. Juice of them is a good seasoning for salads and dishes, which not only makes the food tasty but also stimulates the appetite.
Grape sorbet is another product derived from this plant. And dried under certain conditions, the grapes are called raisins and can be stored for years.
Fine vinegar is also produced from the grape juice.

Harvesting grapes in many areas (fields) of Iran are not only a joy for local farmers. This is an ancient holiday, which is now listed in the list of the national heritage of Iran. These days music and songs are played here, and guests, friends, and passers-by are served with this wonderful gift from the Almighty. After all, the great Prophet of Islam himself (may Allah bless him and his family!) Once remarked that “the best fruit is grapes, and the best food is bread” (Hadith 6002).
